D.O. Ribeira Sacra evolves progressively in the verification of the amount of wine that it bottles annually. In order for the wineries to bottle the wine, it has to pass an analytical and organoleptic control, which involves verification in order to be bottled. Once the verification is obtained, the winery has two months to bottle and put the wine on the market.
Thus, in the last 10 years, the data on the amount of wine verified annually corresponds to the years with the highest harvest. In 2019, 3,929,578 liters of wine were verified in what was the year of the highest harvest of the D.O. Ribeira Sacra, 7,262,831 kilos of grapes. In 2020, the first year of the pandemic, 3,508,134 liters of wine were verified and last year 3,733,221 liters, with which the rate of bottling was not greatly affected by the pandemic, exceeding the data for 2012, 2013, 2014 or 2015 and equaling the bottling figures of 2018 in the first year of the pandemic. The data also shows that the rate of bottling decreases at harvest time, mainly in October, but the decrease can also be seen in September.
And the C.R.D.O.R.S. obtains for 15 months plus the certification of ENAC, National Accreditation Entity, entity designated by the Government to operate in Spain as the only National Accreditation Body, in application of Regulation (CE) nº 765/2008 that regulates the functioning of accreditation in Europe.
The Regulatory Council is a winery certifying entity that issues guarantee seals when the wineries meet all the requirements of the specifications based on the quality manual. Every year this certification work is checked by the ENAC audit, which has just renewed its quality seal with the Denomination of Origin, which allows wineries to continue bottling their product and informs the consumer that quality standards are guaranteed that are required.
